Soft and Fluffy Semolina Cake Recipe

Ingredients:
- 1 cup fine semolina (also known as sooji or rava)
- 1 cup plain yogurt (at room temperature)
- 1 cup granulated sugar
- 1/2 cup vegetable oil or melted butter
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- Zest of 1 lemon or orange (optional, for added flavor)
- Sliced almonds or any nuts (optional, for garnish)
For the Syrup (optional):
- 1/2 cup water
- 1/2 cup granulated sugar
- Juice of 1 lemon or orange
- 1 teaspoon rose water or cardamom powder (optional, for flavor)
Instructions:
- Preheat your oven to 350°F (180°C). Grease a 9-inch round cake pan and line the bottom with parchment paper for easy removal.
- In a mixing bowl, combine the semolina, sugar, baking powder, baking soda, salt, and lemon or orange zest (if using). Mix well to ensure the ingredients are evenly distributed.
- Add the yogurt, vegetable oil or melted butter, and vanilla extract to the dry ingredients. Mix until everything is well combined and you have a smooth batter. Let the batter rest for about 10-15 minutes to allow the semolina to absorb the liquid.
- After resting, give the batter a final mix and pour it into the prepared cake pan. Smooth out the top with a spatula.
- If you’re adding sliced almonds or nuts, sprinkle them evenly over the top of the batter.
- Place the cake pan in the preheated oven and bake for 30-35 minutes, or until the cake is golden brown on top and a toothpick inserted into the center comes out clean.
- While the cake is baking, you can prepare the optional syrup. In a small saucepan, combine the water, sugar, and lemon or orange juice. Bring the mixture to a gentle boil, stirring until the sugar has dissolved. Remove from heat and stir in the rose water or cardamom powder if using.
- Once the cake is baked, remove it from the oven and let it cool in the pan for about 10 minutes. If you made the syrup, you can now poke holes all over the cake using a toothpick or skewer, and then slowly pour the syrup over the warm cake, allowing it to soak in.
- After soaking (if using syrup), carefully transfer the cake to a wire rack to cool completely before slicing and serving.
