Making of Malpua the Recipe of Holi

Ingredients to prepare batter
Semolina: 250 gms
Sugar: 250gms
All purpose flour: 125gms
Fennel seeds: 1 tsp
Milk : ½ litre
Ingredients to prepare Rabri
Milk: ½ litre
Khoya: 150gms
Pistachios: handful
Sugar: 100gms
Ingredients to prepare honey syrup
Honey:250gms
Water: 100ml
Saffron: 2 to 3 stands
Cardamom powder : a pinch
Method of Preparation:
Making of Malpua: Mix flour, semolina, fennel seeds, sugar with a pinch of salt in a bowl. Keep adding milk for every few whisks till it forms a lump-free smooth batter. The consistency of the batter should be of pouring consistency. Keep this mixture aside for about 20 minutes.
Now heat the pan pour either ghee or oil into the pan and let it boil on medium heat. Now ladle some batter into the hot oil, flip and fry until it is golden brown, remove malpua from pan.
Making of Honey Syrup: dilute honey with some water and add some cardamom powder with saffron strands. Now this honey syrup is ready to soak removed malpua from pan. Leave the malpua in the syrup for 30 second to absorb the moisture and keep it aside.
Making of Rabri: Boil milk in a pan till it reaches half its volume. Simmer for half an hour and add khoya, sugar and saffron, let this mixture cool now add crushed pistachios.
Finally align all the malpua’s in order on a plate and pour rabri on top of it, serve this on the special occasion of holi to guests, just see them licking around their fingers admiring the preparation.
